Yummy gyro bowls made with beef, a cuke salad, yummy rice and creamy tzatziki - the best Greek flavors combined into one bowl.

Meat
- 1 pound ground beef can sub lamb, pork or turkey
- 1/4 cup chopped onion
- 1 tbsp minced garlic
- 1 tsp Greek seasoning
- 1/2 tsp salt
- 1 tbsp lemon juice
Tzatziki
- 1/2 tbsp minced garlic
- 1/2 tsp salt to taste
- 1/2 European cucumber peeled, grated and patted dry
- 1 cup plain Greek yogurt
- 1 tbsp chopped mint fresh is preferred but you can used dried
- 1 tbsp chopped dill fresh is preferred but you can use dried
- 1 tbsp olive oil
- 1 tbsp lemon juice
Rice
- 1-2 cups cooked rice white or brown
- 1 tbsp lemon juice
- 1/2 tsp salt to taste
Cucumber and Tomato Salad
- 1 cup cherry tomatoes diced
- 1/2 European cucumber peeled and diced
- 1 tbsp olive oil
- 1 tbsp white vinegar
- 1/2 tsp salt to taste
For the Beef
In a skillet, add the ground beef, minced onion, minced garlic, Greek seasoning, salt and lemon juice. Cook on the stove until the beef is completely browned and the onions are slightly soft.
For the Cucumber & Tomato Salad
- This recipe has such good flavor! You can also sub lamb, pork or ground turkey if you choose. If you really want a full gyro experience you can do this entire recipe but use a pita instead of a bed of rice.
- I use brown rice, but that’s just because it’s typically what I have on hand. You can use white or brown - whatever your preference is!
- You can use this to meal prep too! Make each part ahead of time, store in separate containers, refrigerate and assemble when you’re ready for one of the best lunches of your life.
- You could use the meat portion of the recipe and make it into mini burgers or meatballs but I just left mine ground - it’s up to you!
