This is *literally* one of the easiest appetizers you can possibly make for your Super Bowl Sunday gathering. Sure, you could make this more extravagant if you wanted to, like cutting up your own fresh veggies and adding a ton of toppings, but I’m going to reaaaal easy here. Plus, they’re super cute, real tasty and look like they took way more effort than you actually put into them. A wins a win, baby – even if the team you’re rooting for doesn’t win.

Super Easy Taco Cups

- 1 Mini Muffin Tin
Ingredients
- 1-2 Tortillas
- 1 pound Ground Beef
- 1 packet Taco Seasoning
- 1 container Store-bought or Homemade Guacamole
- 1 container Store-bought or Homemade Pico de Gallo
- 1 cup Taco-Flavored Shredded Cheese
- 1/2 cup Mexican-Style Sour Cream
Instructions
- Preheat oven to 350. Grease a muffin tin with cooking spray and stamp out your tortillas with a biscuit cutter (or espresso cup in my case), or something of a similar size. Place the tortillas in the cups and fold as necessary.
- Make your taco meat. Brown your ground beef and cook the taco meat according to your seasoning package directions. Once the taco meat is prepped you can assemble the cups! Place the taco meat in the tortillas and bake for about 5 minutes or until the cheese is melted and tortillas are starting to brown on the edges.
- After they’re done baking you can finish assembling the cups. Place a small amount of Guacamole and Pico de Gallo on the cups. Then, once the cups are assembled you can drizzle the Mexican Style Sour Cream over the cups.
- Game on and enjoy!

Tips:
- Depending on how full you make the cups you may have extra toppings, but that’s okay. Use that to meal prep your next lunch or dinner.
